The Best Pancakes from Scratch (no sugar)

Ingredients
1 ½ cups all-purpose flour
2 ½ teaspoons aluminum-free baking powder
½ teaspoon salt
1 tablespoon sugar
1 ¼ cups milk of your choice (fresh from the farm if you have it!)
1 egg
3 tablespoons raw butter, gently melted
2 teaspoons vanilla extract (optional but lovely)

Instructions
1. Mix the Batter
In a large bowl, whisk or sift together the flour, baking powder, salt, and sugar.
Make a cozy little well in the center and pour in the milk, egg, melted raw butter, and vanilla.
Break the egg with a fork, then slowly fold the dry and wet ingredients together, pulling the flour in from the edges.
Stir just until the batter comes together — a few lumps are perfectly fine.
2. Cook the Pancakes
Warm a cast-iron skillet or griddle over medium heat. When it’s hot, slick the surface with a little raw butter or your favorite cooking fat.
Pour about ¼ cup of batter for each pancake.
Cook until the edges look set and bubbles rise to the top — about 2 minutes.
Flip gently and cook the other side for about 1 minute.
Resist pressing them down; letting them rise freely keeps them tender and fluffy.
Keep the finished pancakes stacked on a warm plate or tucked under a clean kitchen towel while you finish the batch.
3. Serve
Top your warm pancakes with a generous pat of raw butter and pour over real maple syrup, letting it soak into every soft, steamy layer. Add berries, nuts, or whatever’s in season if you’d like.
