The Best Pancakes from Scratch (no sugar)

Ingredients

  • 1 ½ cups all-purpose flour

  • 1 egg

  • 3 tablespoons raw butter, gently melted

  • 2 teaspoons vanilla extract (optional but lovely)

  • Pure maple syrup for serving

Instructions

1. Mix the Batter

  1. In a large bowl, whisk or sift together the flour, baking powder, salt, and sugar.

  2. Make a cozy little well in the center and pour in the milk, egg, melted raw butter, and vanilla.

  3. Break the egg with a fork, then slowly fold the dry and wet ingredients together, pulling the flour in from the edges.

  4. Stir just until the batter comes together — a few lumps are perfectly fine.

2. Cook the Pancakes

  1. Warm a cast-iron skillet or griddle over medium heat. When it’s hot, slick the surface with a little raw butter or your favorite cooking fat.

  2. Pour about ¼ cup of batter for each pancake.

  3. Cook until the edges look set and bubbles rise to the top — about 2 minutes.

  4. Flip gently and cook the other side for about 1 minute.

  5. Resist pressing them down; letting them rise freely keeps them tender and fluffy.

  6. Keep the finished pancakes stacked on a warm plate or tucked under a clean kitchen towel while you finish the batch.

3. Serve

Top your warm pancakes with a generous pat of raw butter and pour over real maple syrup, letting it soak into every soft, steamy layer. Add berries, nuts, or whatever’s in season if you’d like.
